Poor, Hungry, and Happy

You know it's time to shop when your fridge contents run something along the lines of:

1 frozen chicken
1 bottle of Diet Coke
1 package of brussels sprouts
1/2 raw onion

This was the result of us trying not to shop this week due to unexpected expenses and a tight budget :). The past two days have proven to be interesting meals. Yesterday we made a catch-all vegetable cream soup (leftover broccoli, carrots, onion, cream and sour cream... it was actually delicious) and complemented that with a package of pesto from my parents and stale tortilla chips.

Today was, well, scavenger day. While Andrew was at work, my ravenous appetite led me to scour the pantry and fridge for absolutely anything. I took a nibble at some old protein bars and made soup out of a can of pumpkin from Thanksgiving. I ate several bowls of cereal, had some glasses of chocolate milk with old Nesquik powder, ate copious amounts of my pumpkin soup and several pieces of toast. When Andrew came home after having worked 9 hours on nothing but a bowl of Cheerios for breakfast, he was ravenous. We had more pumpkin soup and tortilla chips, plus the last of the fresh tomatoes with salt. I found an avocado and we also had some leftover pulled pork, so we put that bread.

It reminded me of another time we ran out of food... I think dinner was canned tuna on pieces of dried seaweed. Not our best culinary moment, for sure :). But we made it through the week, and now our pantry is cleared of everything but spices and flours, and our fridge is cleaned out and ready for a new month, a new budget, and grocery shopping tomorrow.

Yay! Ridiculous experiences are awesome, and so is being married to your best friend.

Frozen chicken, anyone? Yum yum yum.

  1. Hahaha... This is so familiar to me. Hang in there, Jenny! And let me just tell you that a hearty soup is a great inexpensive and filling meal for tough times. :)
